Ladies’ Fingers Varavu
Ingredients
- 2 large English onions
- 1/2 lb ladies fingers (okra) - cut into quarter-inch lengths
- 2 large fresh green chillies, mild
- 1 red chilli, broken in two
- 1 1/2 dessert-spoons desiccated coconut
- Pinch of chilli powder
- Quarter flat tsp. turmeric powder
- 1/4 tsp. mustard seeds
- 2 tbsp. cooking oil
- Salt to taste
- 15 curry leaves

- Heat the oil in a pan and add the mustard seeds. Cover with a lid and fry until the seeds pop.
- Finely chop 1/2 an onion and add to the pan, together with the red chilli and about 10 curry leaves. Cook until the onions turn light brown
- Chop the remaining onions into quarter inch chunks.
- Add the onion, ladies fingers, green chillies, coconut, chilli powder, turmeric powder, salt and
remaining curry leaves to the pan, and cover with the lid. - Cook slowly, on a low heat, stirring occasionally. After 10-15 minutes test to see if the vegetables are cooked and serve.
